The Chocolate Co-Op is happy to be able to announce that it is offering a selection of 5 couvertures as well as gifting presentations of Felchlin’s Cru Sauvage—The New World Chocolate Society’s “Chocolate of the Year” for 2005.
Max Felchlin AG is one of the oldest and largest privately-owned chocolate manufacturers in Switzerland. Many people have never heard of them as the mainly supply chocolatiers, pastry chefs, and large foodservice operations. When you can find these chocolates it is because a chocolatier that uses it decides to sell some of it on the side. Chocolatiers you may have heard of that use Felchlin chocolates include Norman Love and LA Burdick.
Overall, Felchlin chocolates are technically excellent (which means that if you are enrobing truffles or making shell molds the chocolate works consistently and well) and the tastes are superb and clean. The Cru Sauvage (bean origin: Bolivia) in particular starts out innocuously but when it warms up in the mouth it literally explodes wight flavors, high in the mouth and nose, with citrusy, floral, and tropical fruit notes. The 49% Creole milk chocolate is one of the fines milk chocolates in the world and the 65% Maracaibo Clasificado was named “Best Couverture in the World” by a prestigious Italian tasting panel in 2004.
New for 2006 is the Hacienda Helvesia (bean origin: Dominican Republic), a 74% dark that is also certified organic. Over 200 years ago, some Swiss settled in the Dominican Republic and started growing cacao. Today, Felchlin is making chocolate from these carefully-husbanded trees that deliver a full expression of Trinitario flavor. Helvesia starts off slightly fruity then gets huge in the mouth with earthy roasty robust flavor that really lingers. A very powerful chocolate. Hacienda Helvesia is currently only available in the Holiday 2006 Sampler of 6, 100gr bars (Which is also the only way to get more Cru Sauvage.)
